I was listening to Kurt's NGW clinic today again and his chord melody of These Foolish Things really amazed me. To have a chord on every beat with melody just shows how much the guitar can do harmonically. He says something before the example about being kind of like stride. Youtube has this:
If that doesn't sell you on buying all of the van eps method books I don't know what will. Any other ideas or comments about translating stride piano to guitar would be awesome. :)
